From Cafe Granja la Esperanza:
Every cherry is hand-picked at its peak ripeness, ensuring only the best make it to your cup. Through a meticulous floating process, we gently separate the cherries, guaranteeing superior quality. Next, we measure their natural sweetness with precision, setting the stage for fermentation magic. For 72 hours, these cherries are lovingly fermented in open tanks, unlocking the vibrant, complex notes that will define your coffee experience. Our cherries are dried to perfection using advanced mechanical driers, ensuring consistent flavor development over 8 to 12 days at a controlled 38 degrees celsius. Once dried, the beans rest in climate-controlled storage, cocooned at an ideal 18-19 degrees celsius to preserve their unique character until it’s time to shine.
