This Natural batch begins with a careful cherry picking process, followed by flotation sorting to remove the least dense fruit. The cherries are then placed in airtight vats for dry fermentation for up to 36 hours. After this step, they are dried on vast open-air patios for 12 to 15 days, depending on weather conditions. Coffee growing in Brazil is a world unto itself, but Anderson has preserved the family spirit of the farm. Along with his three siblings, he transformed his father's legacy into a truly collaborative enterprise. Together, they built Fazenda Boa Vista as it exists today. The family has 13 children, and the ambition is for the new generation to gradually take part in the management of the farm. To date, three of them are already fully invested. The goal is to continue evolving the farm by adopting regenerative agriculture practices and exploring innovative post-harvest techniques.
