Because the cherries ripen at different times, harvesters visit the same tree multiple times to pick only those that are sufficiently ripe.\u003c\/p\u003e\n\u003cp\u003eOnce harvested, the cherries arrive at the processing mill where they are floated in water to remove low-density cherries. They are then separated from overripe cherries, underripe cherries, and foreign matter on sorting tables.\u003c\/p\u003e\n\u003cp\u003eThe selected cherries are immediately spread onto African raised beds covered with clean plastic mesh and dried for approximately 23 to 28 days.
