This batch comes from Xiding, a village nestled in the heart of Menghai County. This blend of Caturra and Catuai varieties perfectly illustrates the qualitative revival of Chinese coffee.

After meticulous sorting with spring water, the cherries undergo a double anaerobic fermentation of 72 hours. A first dry phase of 24 hours is followed by a second stage alternating dry fermentation during the day and wet fermentation at night, under strict pH control.

This rigorous protocol, complemented by a slow 7-day drying process under shade netting, offers a cup with a funky and intense character.

As an espresso, it's a real explosion: the prolonged fermentation brings a syrupy texture and notes of blueberry liqueur and citrus, all balanced by a rich milk chocolate finish.
