Ethiopia Gedeb Corso Bule

This coffee was produced at the Corso Bule Washing Station in collaboration with smallholder coffee farmers living in Corso Bule village and nearby Sike village, located in the Gedeb area of the Gedeo region, Ethiopia. High-quality coffee cherries are carefully selected from 14 small-scale growers living near the village who cultivate small plots for food crops, cash crops, and coffee production.

After bringing the well-ripened cherries to the Corso Bule Washing Station and going through a meticulous selection and pulping process, the coffee is processed using the Modified Washed method.

Modified Washed Process

• Step 1: Select the ripest red cherries (healthy fruit = guaranteed consistent flavor).

• Step 2: Measure the sugar content (Brix) of the cherries and select those with a Brix of 20 or higher.

• Step 3: Separate cherries from foreign matter, float them in water, and remove any cherries that float to the surface.

• Step 4: Ferment the cherries in a siphon/hopper in a shaded area for 12 hours.

• Step 5: Pulp the cherries after washing, sorting, and fermentation, then proceed to the main fermentation stage.

• Step 6: Place the pulped cherries into plastic tanks without water (dry condition) for approximately 12 hours of anaerobic fermentation, followed by 8 hours of aerobic fermentation with water added.

• Step 7: After completing a total of 32 hours of anaerobic and aerobic fermentation, remove the parchment from the tanks and carefully wash it twice with clean water to remove mucilage and impurities (it is not washed as aggressively as typical washed or classic washed processes). Transfer to drying beds and leave in the shade for about 15 days until the moisture content reaches 12%.
