"Managed by Jamison Savage who left United States to start a farm, nestled in 1850-2300+ masl, making it one of the highest altitude farms in the world. His method of planting Geisha trees is to integrated it to the surrounding forest creating a mini ecosystem where cherries are mature slower due to difference in temperature. Iris Estate is a celebration of Terroir-based processing with Cultivar as being the number one source of coffee quality.
Symbiosis is processed by fermenting Ripe Geisha Cherries inside Hermetically Steel Tank for 100 Hours. As the cherries ferment, the pH & Temperature are closely monitors as it affects the rate of fermentation. After fermentation, the cherries are slowly dried on three-tiered raised bed in single layer to dry evenly.
This lot Sweetness is enhanced through controlled Anaerobic Natural where the fermentation intensity is kept to be balanced. Giving you dominant Tropical Fruit spectrum. With our brewing recipe, we got Mango, Jasmine, Nectarine at Hot, then shifting into High Complexity tones like Concord Grapes & Pineapple with Honey Sweetness as the coffee cools down."
