Panama Mount Totumas Pache
Grown at an altitude of nearly 1,900 meters in the heart of the Mount Totumas forest, this Pache, which is a natural mutation of the Typica variety, undergoes a cold fermentation washed process: after pulping, the Whole Beans placed in closed vats for slow, controlled fermentation at low temperatures.
This cold processing slows down microbial activity, allowing for a more gradual breakdown of the mucilage and the extraction of clean, precise, and delicately fruity aromas, while preserving a high level of purity. Once fermentation is complete, the Whole Beans carefully washed and then dried to preserve the subtlety of the profile.
In the cup, it reveals a slight acidity and a sweet, comforting finish. A simple, refined, and deeply authentic blend.
